Ingredients

  • 100 g peanut butter
  • 80 ml coconut milk
  • 40 ml soy sauce
  • 30 ml lime juice
  • 30 g brown sugar
  • 20 g garlic
  • 20 g ginger
  • 8 g curry powder

Instructions

  1. Whisk the peanut butter with coconut milk until smooth.
  2. Add soy sauce, lime juice, brown sugar, garlic, ginger, and curry powder.
  3. Blend or whisk until the marinade is glossy and fully combined.
  4. Use on chicken, beef, pork, tofu, or mushrooms and refrigerate while marinating.

Serving Ideas

  • Use with chicken, pork, beef, lamb, seafood, tofu, mushrooms, or vegetables.
  • Best for grilling, roasting, skewers, broiling, or pan-searing after marinating.
  • Reserve a clean portion before marinating if you want extra sauce for basting or serving.

Tips from @saucesanddips

  • Keep the heat gentle after adding dairy or egg so the sauce stays smooth.
  • Toast nuts or seeds lightly for a deeper flavor before blending.
  • Use clean utensils and store in a covered container for the best shelf life.

Storage

Store unused marinade in a clean airtight container in the refrigerator for up to 3 days. Discard any marinade that touched raw meat, seafood, or poultry unless boiled thoroughly before reuse.
