Kyopolou Recipe

Roasted aubergine gives kyopolou its soft body, and sweet peppers bring colour and a smoky sweetness. This version is chopped by hand with raw garlic and parsley, leaving enough texture to spread generously on bread. Drain the vegetables before mixing so their flavour stays concentrated.

  • Spread on bread and serve with Bulgarian white brined cheese and sliced tomatoes.

Substitutions

  • Green peppers make a less sweet variation. Reduce the vinegar if the tomato is especially tart.

Chef Tips

  • Peel the peppers without rinsing them under the tap; rinsing washes away some of the roasted flavour.

Storage

Refrigerate covered within 2 hours at 4°C or below and use within 3 days. This fresh spread is not a canning recipe.
