Mirza Ghasemi Recipe

Smoke is the starting point for this northern Iranian dish. Let the aubergines collapse completely before peeling them; their flesh should be silky enough to mash with a spoon. Tomatoes provide the sauce, plenty of garlic gives it character, and eggs turn the mixture into something substantial enough to eat with bread or rice.

Substitutions

  • An oven-roasted aubergine works when a grill is unavailable, although the smoke will be gentler.

Storage

Refrigerate within 2 hours in a shallow covered container at 4°C or below; use within 3 days. Reheat until steaming throughout.
