Ponzu Sauce Recipe

Ponzu Sauce is a light, tangy, and savory Japanese condiment made with citrus juice, soy sauce, and a hint of umami. It’s ideal for dipping dumplings, drizzling over grilled fish, or serving as a bright salad dressing or marinade.


Ingredients (Makes about 3/4 cup)

  • 1/4 cup soy sauce
  • 2 tablespoons yuzu juice (or a mix of lemon and lime juice)
  • 1 tablespoon rice vinegar
  • 1 tablespoon mirin (or 1 teaspoon honey for sweetness)
  • 1 tablespoon bonito flakes (optional for umami)
  • 1 piece kombu (dried kelp), about 2 inches (optional)
  • 1 teaspoon sesame oil (optional)

Instructions

1. Mix the Base
In a small bowl or jar, combine soy sauce, citrus juice, rice vinegar, and mirin (or honey). Stir well.

2. Infuse with Umami (Optional)
Add bonito flakes and kombu. Let steep for 10–15 minutes, then strain.

3. Finish and Store
Stir in sesame oil if desired. Store in the refrigerator for up to 5 days.

  • Use as a dipping sauce for dumplings, sashimi, or tempura
  • Drizzle over tofu, noodles, or grilled fish
  • Add to salad dressings or stir-fry sauces for brightness
