- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beer (lager or pale ale recommended)
- 1 cup whole milk or half-and-half
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (optional for smoky flavor)
- 2 cups sharp cheddar cheese, shredded
- 1/4 cup cream cheese (optional for extra creaminess)
- Salt and pepper to taste
Instructions
1. Make the Roux
Melt butter in a saucepan over medium heat. Add flour and whisk for 1–2 minutes until golden and fragrant.
2. Add Beer and Milk
Slowly pour in the beer and milk while whisking to avoid lumps. Simmer 3–4 minutes until slightly thickened.
3. Flavor It
Stir in Dijon mustard, Worcestershire sauce, garlic powder, and paprika.
4. Melt the Cheese
Reduce heat to low. Add cheddar in batches, whisking until smooth. Stir in cream cheese if using.
