Cherry Tomato Ragu

Classic tomato ragu paste. Here’s what you need!

Ingredients

2 tablespoons olive oil

1 large onion, finely chopped

4 garlic cloves, minced

2 pounds cherry tomatoes, halved

1/2 cup red wine

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for extra spice)

Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion is soft and translucent, about 5-7 minutes.
  2. Add the garlic and cook for another minute, until fragrant.
  3. Add the cherry tomatoes to the skillet. Cook, stirring occasionally, until the tomatoes start to break down and release their juices, about 10 minutes.
  4. Pour in the red wine (if using) and cook until it has mostly evaporated, about 5 minutes.
  5. Stir in the tomato paste, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper.
  6. Reduce the heat to low and let the ragu simmer gently for about 20-30 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded.
  7. Adjust seasoning with more salt and pepper if needed.
  8. Serve the cherry tomato ragu over your favorite pasta, garnished with fresh basil leaves and freshly grated Parmesan cheese.
