Classic tomato ragu paste. Here’s what you need!
Ingredients
2 tablespoons olive oil
1 large onion, finely chopped
4 garlic cloves, minced
2 pounds cherry tomatoes, halved
1/2 cup red wine
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional, for extra spice)
Salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion is soft and translucent, about 5-7 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Add the cherry tomatoes to the skillet. Cook, stirring occasionally, until the tomatoes start to break down and release their juices, about 10 minutes.
- Pour in the red wine (if using) and cook until it has mostly evaporated, about 5 minutes.
- Stir in the tomato paste, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper.
- Reduce the heat to low and let the ragu simmer gently for about 20-30 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded.
- Adjust seasoning with more salt and pepper if needed.
- Serve the cherry tomato ragu over your favorite pasta, garnished with fresh basil leaves and freshly grated Parmesan cheese.
